QUINOA FANCIED UP & SALMON WITH DILL


HEALTHY & DELICIOUS!
QUINOA IS MORE OF AN ART THAN AN EXACT RECIPE.  HERE IS MY BASIC HOW-TO AS I DO NOT MEASURE.  THAT'S THE JOY OF IT!  IF I CAN MAKE IT TASTE GOOD WITHOUT MEASURING......ANYONE CAN!!!!!


COOK QUINOA:  I BOIL 2C. WATER AND 1C. QUINOA. THEN I COVER, LOWER TO A SIMMER AND COOK ABOUT 12-15 MINUTES.  POUR INTO A BOWL.
 THEN I TOP IT WITH:
JUICE OF 1 LEMON
A FEW TABLESPOONS OF AVOCADO OIL
A FEW TABLESPOONS OF COCONUT OIL
FROZEN ROASTED CORN
SLICED GRAPES
CHOPPED SCALLIONS
DRIED CRANBERRIES
SLICED ALMONDS
CHIA SEEDS
SALT & PEPPER TO TASTE

THE QUINOA IS FROM COSTCO-NICE AND BIG! I RECEIVED THE AVOCADO OIL AND CHIA SEEDS FROM CHOSEN FOODS.

SALMON-I BRUSHED THIS WITH SOFTENED BUTTER (JUST A LITTLE), ADD SALT, PEPPER AND FRESH CHOPPED DILL.  BROIL ON NONSTICK FOIL FOR ABOUT 12 MINUTES OR SO.
