BEST! COCONUT! GRANOLA! EVER!

BEST! COCONUT! GRANOLA! EVER!








2 cups old-fashioned oats
3/4 cup shredded sweetened coconut
1/2 cup slivered almonds
2 tablespoons brown sugar
1 teaspoon cinnamon
1/4 teaspoon salt
4 tablespoons melted coconut oil
1/2 cup pure maple syrup
1 teaspoon vanilla extract

Directions:

1. Preheat the oven to 300 degrees F. Line a large baking sheet with parchment paper.

2. In a large bowl, combine oats, coconut, almonds, brown sugar, cinnamon, and salt. Pour in the coconut oil, maple syrup, & vanilla. Stir well until dry ingredients are well-coated.

3. Pour the granola onto the sheet in an even layer. Bake for 30 minutes or until granola is golden brown, stirring every 10 minutes. Let cool completely. Store in a container for up to 1 month.

4. Serve with fresh berries, sliced bananas and almond milk! Mmmmmmm!!!

MAKE YOUR OWN GRANOLA BARS


Ingredients
1/4 c. butter
1/4 c. honey
1/3 c. brown sugar
2 c. quick oats
1 c. rice krispies
1/2 tsp. vanilla
1/2 c. mini chocolate chips
1/2 c. mini m&m's
1/2 c. mini marshmallow bits from kraft
Instructions
In a pot, combine the butter and honey. Stir over medium until melted and starting to bubble. Lower heat and cook for 2 minutes. Stir in the vanilla. (It may bubble up) Add the oats & krispies stirring until coated. Let cool for a few minutes before stirring in all of the goodies.
Press into a 9x13 nonstick foil lined pan. Be sure to really press down firmly so it stay together later. I will need to push mine down even better next time! Let sit a few hours before cutting. Mine held up best in refrigerator-just let sit out 5 mins before eating.

Organic Peanut Butter Granola Bites with Dried Cherries!

A perfect healthy little snack...compliments of Martha!
Ingredients:
1/3 cup honey
1/4 cup natural peanut butter
2 tablespoons butter
1 cup crisp rice cereal (I used brown rice krispies sold at whole foods but rice krispies will work fine)
1 cup old-fashioned rolled oats
1/4 cup dried fruit (I used dried cherries, cranberries & have used apricots too)

Directions:
In a small saucepan over medium, heat honey, peanut butter, and butter. Stir until loosened and smooth, 1 to 2 minutes. Remove from heat; stir in cereal, oats, and dried fruit.
Drop mixture by the tablespoon into mini paper cupcake or candy liners. Place on a rimmed baking sheet, and refrigerate until set, about 15 minutes. To store, refrigerate in an airtight container up to 1 week.

(Note: these do hold together loosely but will never stick together completely)
