COGNAC MEATBALLS!

MEATBALLS COOKED IN COGNAC CREAM SAUCE & PROSCIUTTO!
I CREATED THIS RECIPE AS I WENT AND SO IT IS MORE OF A HOW-TO THAN A RECIPE. I USED 1 POUND GROUND CHICKEN BUT OF COURSE, YOU CAN USE ANY GROUND MEAT. I ADDED GF BREAD CRUMBS AND PARMESAN CHEESE, SALT AND PEPPER. FORM MEATBALLS AND BROWN IN OLIVE OIL ALONG WITH SOME CHOPPED PROSCIUTTO. ONCE BROWNED ADD APPROX. 1/4C. COGNAC AND LET COOK DOWN. ADD 1/4-1/2C. CHICKEN BROTH. ONCE SIMMERING, ADD 2-3 T. HEAVY CREAM AND MORE SALT AND PEPPER TO TASTE. THROW IN SOME FRESH ROSEMARY AND SERVE OVER QUINOA, GF PASTA OR RICE!
